12 oz. drained canned red kidney beans
1/4 cup (4oz can) drained whole green chili peppers minced
1/4 cup minced onion
1 tbls. chili powder
1/2 teas. oregano leaves
1/4 teas. salt
1/8 teas. hot sauce
Dash ground cumin
4 corn tortillas
4 oz. sharp cheddar cheese shredded

Preheat oven to 400
In medium bowl, using the back of a fork, mash kidney beans to a paste; add chili peppers, onion and seasonings and mix well. Set aside

Break each tortilla in half; on baking sheet or sheet of foil bake tortilla halves until crisp, about 2 min.
Remove from oven,but do not turn oven off

Arrange baked halves, curved-sid out and overlapping around edge of 8 in. pie plate, spread kidney bean mixture evenly over tortillas, leaving a tortilla border all the way around.

Pistachio Salad

Mix:

1 can (med size) crushed pineapple with juices
1 sm. pkg. pistachio instant pudding

Fold in 1 9 oz. container Cool Whip
Top with nuts and cherries for decoration

Can be served right away

Bacardi Rum Cake

Cake:

1 cup chopped pecans or walnuts
1 (18 1/2 oz) pkg. yellow cake mix
1 (3 3/4 oz) pkg. instant vanilla pudding mix
4 eggs
1/2 cup cold water
1/2 cup Wesson oil
1/2 cup Bacardi, dark rum (80 proof)

Glaze:

1/4 lb butter
1/4 cup water
1 cup granulated sugar
1/2 cup Bacardi rum
Melt butter in sauce pan. Stir in water and sugar
Boil 5 min. stirring constantly
Remove from heat.
Stir in rum

Preheat oven to 325
Grease and flour 10″ tube or 12 cup Bundt pan.
Sprinkle nuts over bottom of pan
Mix all cake ingredients together
Pour batter over nuts
Bake 1 hour. Cool.
Invert on serving plate.
Prick top.
Drizzle and smooth glaze evenly over top and sides
Allow cake to absorb glaze
Repeat until glaze is used up

Poppy Seed Cake

1 box yellow cake mix
1 sm. box vanilla instant pudding
1/2 tsp. nutmeg
3/4 cup oil
3/4 cup pale dry sherry
4 eggs

Combine all ingredients.
Beat for 4 min.
Fold in 1/3 cup poppy seeds.

Bake 350 for 50 min. in greased and floured cake pan or bundt pan

Dump Cake

Dump everything together:

2 cans crushed pineapple
Cherry pie filling (prepared)
Yellow cake mix
1 cup melted butter
chopped nuts

Grease pan
Oven at 350
Bake 50-60 min.

Mushroom Parmesan

Base Recipe:

Grease shallow 1 1/2 qt. casserole dish
Clean (not sliced) 1 lb mushrooms with 1-2 in. caps
Cut off stems from caps.
Place caps open side up in casserole dish.
Set aside.
Finely chop mushroom stems

Heat in skillet:

2 tbls. olive oil and add mushroom stems
1/4 cup chopped onion
1/2 clove garlic finely chopped

cook slowly until lightly browned

Meanwhile combine:

1/3 cup (slice fine) dry bread crumbs
3 tbls. grated parmesan cheese
1 tbls. chopped parsley
1/2 teas. salt
1/8 teas. oregano

Mix in onion, garlic, and stems. Pile mixture lightly into inverted caps
Pour in casserole 2 tbls. olive oil.

Bake at 400 15-20 min. or until mushrooms are tender and tops are browned

serves 6-8 people

2 cans of fruit cocktail (or however many for more people)
1 bag of small colored marshmallows
1 bag of coconut
1 tub Cool Whip
1 box of Jello powder (for flavor and color)

In a large bowl combine all ingredients. Put in refridgerator to cool. Then serve.

Chili Rellenos

6 Ortega Whole Green Chili’s
2 cups (8oz) Jack Cheese (or Muenstar)
1/2 cup flour seasoned with salt and pepper
3 eggs separated
3 tbls. flour
Oil for frying
1 cup Ortega Chili Green Salsa

Drain and slit each chili lengthwise just enough to remove the seeds,if desired.
Cut cheese into strips 1/2″ thick and long enough to fit into chilies.
Stuff chili with piece of cheese.
Dredge stuffed chilies in seasoned flour.
Set aside.

Beat egg whites until stiff peaks form
Beat egg yolks until creamy..
Fold yolks into whites adding 3 tbls. flour as you fold.
Dip each stuffed chili into this batter and set on a small dish.
Slide coated chili from dish into deep hot oil to fry.
Fry until golden brown, about 2 min. turning once gently.
Drain rellenos on a paper towel
Serve with heated chili salsa

Put the ingredients in boiling water with seasonings. Let cook until noodles are done.

Add chicken and enjoy.

You can eat with oyster crackers, regular crackers, french garlic bread.
